Honey, Garlic, Soy Sauce Marinated Salmon

Juicy & succulent glazed salmon makes for the most deliciously healthy 20 minute meal. Add a side of cilantro-jasmine rice and top with a wonderful avocado salad.

INGREDIENTS

  • 2 salmon filets

  • 2 1/2 tbsp olive oil

  • 1 cup jasmine rice

  • 1 cup water

  • 1 tsp each of salt & pepper

  • 2 tbsp soy sauce

  • 1 tbsp honey

  • 1 tsp rice vinegar

  • 1 tbsp fresh minced garlic

  • 2 tbsp chopped fresh cilantro

  • 1/4 tsp garlic powder

  • 2 ripe avocados

  • lemon slices for serving

 

INSTRUCTIONS

  1. In a small bowl, mix together the honey, soy sauce, rice vinegar, 1 tbsp of cilantro and garlic. Season salmon filets with salt and pepper then add to a ziplock bag. Pour the soy mixture over the salmon and marinate for 30 minutes to an hour.

  2. Pre-heat the oven to 425 degrees F. Meanwhile, heat 2 tbsp of olive oil in a non-stick skillet or cast-iron skillet until it begins to smoke. Place salmon filets in the oil, skin side down and cook for about 2-3 minutes or until skin is nice and crispy. Transfer the salmon to a foil lined baking sheet and place in the pre-heated oven for 12-15 minutes depending on the thickness of your salmon filets.

  3. Cook 1 cup jasmine rice in one cup of water, or according to package.

  4. Slice and remove pit from 2 ripe avocados. Cut into chunks and season with remaining 1/2 tbsp of olive oil, salt, pepper and garlic powder. Sprinkle with fresh chopped cilantro. Season jasmine rice with salt and pepper, sprinkle cilantro and fluff with a fork. Serve the salmon filets on top of the rice, top with avocado salad and lemon slices.
